Assemblage of Pinot Noir and Aligoté. Organic farming. The grapes are harvested by hand, with white varieties undergoing alcoholic fermentation with indigenous yeasts in wood, and the reds seeing carbonic maceration in stainless steel. The wine matures for a few months in steel before being bottled unfined and unfiltered.
