NV Henri Giraud Hommage au Pinot Noir Aÿ (dég. 04/2021)

Happy New Year's Eve and have a good start into the new year 2025!
Gold to amber in colour. The first impression on the nose is luscious, saline, and lightly yeasty. Braeburn apple, pear, salted almonds, toasted bread, bread dough, and hints of wild strawberries. Medium-bodied on the palate. The mousse is lush and creamy. The precise acidity keeps everything nicely balanced and mouth-watering. Dried orange slices, oxidised apple, preserved pear, grapefruit, strawberry. Ending in a long finish with grapefruit again, apple tart, toffee and salted nuts. Complex, but never heavy despite its oxidised style. Surprisingly refreshing, in fact. I like it!
